Hey! Today I'm going to share with you one of my easiest recipes ever - Poached Chicken!! This is fast and simple to make (20 minutes!!) and you can use it to create so many quick week-night meals - you don't even need to remember to take chicken out of the deep freeze before you leave for work in the morning!
Easy Poached Chicken
Ingredients:
2-4 frozen skinless, boneless chicken breasts
4 cloves of garlic, skins on, crushed with the back of a knife1 small onion, quartered, skins still on
2 carrots, cut into large pieces
2 ribs of celery, cut into large pieces
2 bay leaves
10-12 whole peppercorns
small handful of coarse sea salt
In a medium saucepan, add all ingredients and add enough water to cover. On high heat, bring to a boil. Once boil is achieved, turn heat down to medium high and start the timer for 20 minutes. Once the timer is up, remove chicken breasts to a glass bowl and shred using 2 forks. WARNING: this chicken ain't pretty. It's ugly and even greyish in colour but the taste is amazing and this chicken can be used for pitas, salads, vietnemese subs, pizzas, whatever you want. So easy and healthy - did you notice that there wasn't even any oil added??
