Easy Chicken Quesadillas

So remember how I told you that Poached Chicken is one of the easiest things that you can use to make millions of great meals from?  Tonight I poached up some chicken, whipped up some salsa and grated some cheese... how easy is that to put together a quick meal for the old fam!

Since the nice weather looks like it's left for a few days, I decided to pull out my Gordon Ramsay Grill - seriously one of the best wedding presents we received - and press us up the quesadillas.  And yes, you can use a George Foreman, but we used to have one of those and Gordon's grill is far superior - clean up is much easier, there are more settings available and it just is wayyyy better.  Trust me. 

Back to dinner prep; here's how it all went down:

Easy Chicken Quesadillas
Ingredients:
4-6 poached chicken breasts, shredded 
2 cups grated old cheddar cheese
1 cup grated Monteray Jack cheese
1 batch Southwestern Black Bean Salsa
8 large multigrain tortillas (or whatever kind your fam likes)
500ml container low fat sour cream


Method:
Get your grill warmed up; I used mine on the Grill setting, med-high, 400degrees. 

Covering one half of the tortilla, layer cheese, chicken, salsa & more cheese.  Fold over to make a half moon.
 
Make sure you spread the ingredients fairly evenly, and don't go too ballistic b/c you will end up with more cheese melted in the grill then in your quesadilla!
This was the least messy batch!
Make sure you position the folded sides to the outer sides, and the open sides toward the centre.  If you do it the other way, you may end up with a cheese explosion out the back, which did happen to me tonight :(

Anyhoo, dinner turned out awesome - super kid friendly - even had a request to make up more for the old school lunch box tomorrow; that equals a hit!
