El Diablo contra Vampiro Salsa

Here is my secret recipe to my super hot out of control salsa, that I've dubbed "El Diable contra Vampiro" which I guess means Demon vs. Vampire, which goes to say that a devil and a vampire will both die if they eat this salsa.  It's that crazy.  My recipe changes slightly every time I make it, based on what I have in the house, but it always comes out awesome.  I'm going to share with you the basis and method for making the salsa and you can switch it up as you like!



El Diablo contra Vampiro Salsa
Ingredients:
1 cup grape tomatoes
3 - 4 ripe hot house tomatoes
1 head of garlic
2 large jalapenos (one red and one green)
about a cup of cilantro, mostly leaves, but some stems ok
2 really large shallots, or a small red onion
juice of one lime (duh, forgot to include on original posting!)
olive oil
coarse sea salt

Method:
Preheat oven to 425degrees.  On a cookie sheet, toss all of the tomatoes, 5 - 6 individual cloves of garlic (smashed) and the red jalapeno with a good healthy drizzle of olive oil and a shake of the salt.  Stick in the oven, taking out every 5 minutes or so to stir. 



Do this for about 15-20 minutes or until the skins start to split - you can even do this under the broiler and let some charr form.



Remove from oven and let cool completely.

Reserving the jalapeno, scrape the cooled tomatoes, etc into a food processor and pulse.  Don't puree the hell out of this; you want the consistency to by chunky like salsa!!  Pour into a large mixing bowl. 

In the same food processor (no need to wash it) add another 4-5 cloves of garlic, lime juice, the cooked jalapeno and the fresh green one (remove seeds if you want to control the heat), the shallots or red onion, the cilantro, a bit more salt and another swirl of olive oil.  Pulse until coarse and still recognizable, but a bit finer than how you did the tomatoes.



Combine this mixture with the tomatoes and voila!  You will now be able to ward off vampires, demons, werewolves and many other evil creatures of the night.  **DISCLAIMER - do NOT serve to a date or anyone you want to get "close to" tonight.  This also works very well as an immunity booster, so serve with Witches Brew if you're feeling crappy but still have an appetite.

  4. Beautiful colors and I LOVE the name!! I make a similar salsa that I got from a friend who is mexican and grew up in southern california which is awesome but it only uses raw tomatoes. I bet this is so much sweeter from the roasting--can't wait to try it! One thing her recipe has that I love is a squeeze of lime which you might want to try--the acidity really adds a punch that keeps you coming back for more! Thanks for sharing!
