Great Start: Apple Museli!!

Yesterday, I finally checked the mailbox (was away all week) and I had received the November issue of Food & Wine Magazine.  I took it to the gym with me to read and I was instantly inspired to create many things!!  Here is my first project, Apple Museli - an adaptation of Apple Museli with Goji Berries.

It was still dark out this morning when our family ate breakfast!!

Apple Museli
Ingredients:
2 large Royal Gala apples
1 cup rolled oats
3 tbsp flax seed
1 1/4 cup coconut juice
1 cup non-fat strawberry yogurt
1/4 cup Greek yogurt
1/2 cup chopped walnuts
3 tbsp agave syrup
1/2 tsp cinnamon
pinch of salt
granola, mixed berries for garnish

Method:
With a box grater, grate the apples in a large bowl (catching the juices).

Grate away!

Add all other ingredients and stir to combine. 


Cover and store in the fridge overnight. 


This will last for a couple days and tastes delicious!!

  5. I had this the other day at a hotel and have been meaning to find a recipe. This looks just like what I had so I know it is delicious!
